These sumptuous, artfully crafted meals can be savored in our stylishly decorated dining rooms, as well as at the bar, in the lounges, in the gallery, alfresco in warmer months or in one of our private meeting rooms.

In my kitchen, we are striving for excellence and absolute customization. We strive to discover new things every day, just as we strive to help our members make those discoveries. I like to encourage members to select chef tasting menus, in which I carefully choose new and unexpected dishes that often challenge their traditional taste, but I am certain they will enjoy. The members at CORE: are more than dinner guests or patrons of a restaurant, they are part of our community and it’s our duty and our pleasure to make them feel special.
Our menu changes 8 or 9 times a year. Only one dish has been on the menu since my first day at CORE:. We always move forward and challenge our creativity: once a dish is removed, it’s not coming back which leads to new discoveries or wonderful reinterpretations of crowd pleasers.
As a Maîtres Cuisiniers de France, I am committed to encouraging training in cuisine, transmitting knowledge, assisting in professional development and mentoring young chefs. I have witnessed sustained excellence working with legends such as Chef Mark Veyrat and Christian Constant, both two-star Michelin restaurants. I love sharing my passion for food. To continue this tradition of learning and discovery, I plan an intimate series here at CORE: to present cooking classes, cheese tastings, dessert-making classes, and many other types of workshops, so that our members can continue to discover and enrich themselves.
